Why are there two sets of brown cows? 6356 and 7079

Both for sale at the same time? One has black eyes and slightly lighter brown patches.

7079 is described as "Bull, cow and calf" on the UK site, although if you click on the small picture the description under the large picture is "The two cows stand by the newborn calf...".  On the US site, 6356 is described as "Two cows with calf" and no other description underneath.

I just assume the darker brown cows are the former version, and the lightbrown ones are the newest.
They're on German DS with the tag 'NEU', whereas they aren't yet available on the Belgian DS site, that still offers the darker brown ones.

I guess some other websites have both of them already available.

The official parts sheet for 6356 states that it contains a cow, calf and bull. They're definitely different parts from those in 7079 - creamy coloured, not white. The white ones in 7079 have been available since 1999; the 7079 set itself, from 2001.

6356 are the tan and white cattle like in the Alpine series sets, the 7079 are more the reddish brown cattle that have been around a while.

The deeper question though is why Alpine cows should be lighter. I mean, closer to the sun, they'd be browner, right? What is Zirndorf's thinking on this matter.

They are probably thinking of Traditional Simmental. See the first photo on the wiki page here.
The 7079 type is more like a Red Holstein.
